VEGETABLE FRITATTA

Vegetable Fritatta

INGREDIENTS:

DIRECTIONS:

  1. Cook cubed white potato for 10 minutes, drain and put aside.
  2. Preheat broiler and set the rack 6 inches from the top.
  3. In a nonstick 7-inch skillet, heat 1 tablespoon olive oil, add chopped onion, peppers, sliced mushrooms, zucchini, salt and pepper; saute for 5 minutes. Add 1/2 cup of cooked cubed potatoes. Cook left over potato in olive oil to make home fries.
  4. Whisk eggs, pour over vegetables, reduce heat, cover and cook until eggs are set. Gently slide to a baking pan, top with sliced tomato and shredded cheddar cheese. Place under broiler for 2 minutes.
