TURKEY-WHITE-BEAN STEW
INGREDIENTS:
- 2 cups chicken stock
- 1 sweet potato, peeled and cubed
- 2 medium yellow or white potatoes, peeled and cubed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 poblano or green bell pepper, chopped
- 2 tablespoons olive oil
- 2 cups cubed cooked turkey
- 2 cup cooked white beans, drained
- 1 cup filtered water
- 2 tablespoons flour
- 2 tablespoons poultry seasoning
- salt and pepper to taste
DIRECTIONS:
- Put chicken stock, sweet potato and yellow or white potatoes into a large pot.
Bring to a boil, reduce heat and simmer for 15 minutes.
- In a large skillet, saute onion, garlic and green pepper for 2 minutes.
Add to simmering potatoes along with cooked beans, turkey and seasoning.
- In a blender, mix 2 tablespoons of flour with 1 cup of water and add
to the stew; keep cooking for at least 5 more minutes.
