TURKEY RED BEAN CHILI
INGREDIENTS:
- 1/2 cup finely chopped shallots, or onion
- 1/4 cup finely chopped bell peppers
- 1/4 cup finely chopped celery
- 3 garlic cloves, minced
- 1/2 lb lean ground turkey
- 1 tablespoon olive oil
- 1 14.5 oz can diced tomatoes with juice, no salt added
- 1 19 oz can red beans, drained
- 1 cup filtered water
- 4 tablespoons organic tomato paste
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- salt and freshly ground pepper to taste
- juice of 1 lime
- shredded cheddar cheese for topping (optional)
DIRECTIONS:
- Heat 1 tablespoon of olive oil in a large skillet, add shallots, peppers, celery,
garlic and turkey, saute on medium for 5-10 minutes, mixing occasionally.
- Add tomatoes, beans, water, tomato paste and spices to the skillet,
simmer for about 20 minutes. Season with salt and pepper, mix in the lime juice.
