Spinach Mushroom Omelet

INGREDIENTS:

  1. In a nonstick skillet heat 1 tablespoon olive oil, add chopped onion, peppers, sliced mushrooms, salt, pepper and saute for 5 minutes; add cooked spinach.
  2. Beat eggs with milk. Heat a lightly oiled 7-inch skillet, pour in egg mixture and cook until there is no liquid left in eggs. Put vegetables on top and fold omelet in half.
