BANANA-NUT BREAD
INGREDIENTS:
- 1 cup quinoa flour or whole wheat pastry flour
- 1/4 cup flaxseed meal (optional)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspon salt
- 2 large eggs
- 1/2 cup natural raw sugar or coconut palm sugar
- 1/4 cup virgin coconut oil, at room temperature or canola oil
- 1/2 cup plain greek yogurt
- 2 teaspoons pure vanilla extract
- 2 - 3 ripe bananas (1 cup ) mashed
- 1 cup finely chopped pecans
DIRECTIONS:
- Preheat oven to 350 ° F.
- In a medium bowl, beat eggs and sugar until smooth and fluffy.
Add coconut oil, yogurt, vanilla and banana; mix together.
- In a large bowl, combine quinoa flour, flaxseed meal, baking
powder, baking soda and salt.
Add liquid ingredients to flour and mix well ; fold in pecans.
- Pour batter into a lightly oiled, floured 9x5 inch baking pan.
Bake for 35-40 minutes.
