Banana Nut Bread

INGREDIENTS:

DIRECTIONS:

  1. Preheat oven to 350 ° F.

  2. In a medium bowl, beat eggs and sugar until smooth and fluffy.
    Add coconut oil, yogurt, vanilla and banana; mix together.

  3. In a large bowl, combine quinoa flour, flaxseed meal, baking
    powder, baking soda and salt.
    Add liquid ingredients to flour and mix well ; fold in pecans.

  4. Pour batter into a lightly oiled, floured 9x5 inch baking pan.
    Bake for 35-40 minutes.
